Use a very tiny number of oil or butter to shallow fry them until they are slightly browned and caramelized on both sides.
I learn some people like to fry these black-aged plantains given that it’s actually sweet. In that case, I will suggest you to stay away from intense frying because it absorbs so much Oil.
